Background
This is a fantastic dish for the family - kids just love it and it's so easy to make! Serve your Coconut chicken pilafΒ with a green salad on the side.
Ingredients
- 2 chicken breast fillets (about 300g)
- 2 medium leeks (white part only)
- 1 red or orange pepper
- 1 Tbsp vegetable oil
- 300g basmati rice
- 700 ml chicken stock
- 100 ml coconut cream
- 1 small bunch coriander
Instructions
- Cut the chicken breasts into long strips ½ cm wide.
- Slice the leeks and the peppers into thin strips.
- Heat the oil in a large thick-based saucepan. Add the chicken and cook for 2-3 minutes until light brown, then add the sliced vegetables. Simmer (under cover) for about 4-5 minutes.
- Add the rice and stir for a minute, then pour in the coconut cream and stock.
- Stir, then bring to the boil and simmer (covered) for 15-20 minutes until tender and the liquid absorbed.
- Finely chop the coriander, stir into the pilaf. Season to taste and serve hot .
