Coconut and chocolate muffin
Background
The batter of these coconut and chocolate muffins can be mixed together in five minutes then the baking only takes 20 minutes. So it’s a perfect snack for parties, afternoon teas, picnics, etc. Given it's so easy to make, it’s an ideal recipe for kids to try to bake. Also, it’s dairy- free! I used cocoa coconut milk - if you don't have any, just use plain coconut milk and add 1 Tbsp cocoa powder to the batter.
Ingredients
- 2 cups of flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup of coconut milk (with cocoa)
- 1 cup unrefined cane sugar
- 1 large egg
- ⅓ cup of sunflower oil
- ½ cup of desiccated coconut (unsweetened)
Instructions
- Preheat the oven to 180°C.
- Mix the flour, baking powder, sugar and salt in a large bowl.
- In another, smaller, bowl mix the egg, oil and coconut milk.
- Combine the two mixtures, then fold in gently the desiccated coconut.
- Spoon the batter into silicone muffin cases or a lined muffin tin.
- Bake for 20-25 minutes, then sprinkle with coconut and let it cool on a rack.
