
Background
In Central Europe cookie balls are very popular treats and gifts during the winter festivities. There super easy to make, no baking or cooking required. The cookies you use can be vegan and/or gluten-free too. This version has no sugar nor fat either, so it’s more healthy than the usual one. It is quite boozy though so it’s not suitable for kids (you can leave out the alcohol for them). You can also leave out the nuts if you like. These coconut cookie balls make ideal Xmas present to teachers and friends too!
Ingredients
- 1 cup ground digestive or out biscuits (can be gluten and/or dairy free)
- 1 cup mixed dried fruits (sultans, date, raisin etc.)
- 1 cup finely chopped nuts (walnut or hazelnuts), optional
- 3 Tbsp Brandy or Rum (optional)
- 1 cup of fruit juice (such as apple or cranberry)
- 1 tsp vanilla extract
- Desiccated coconut
Instructions
- Grind the biscuits and nuts using a food processor until the mixture resemble breadcrumbs. Add the dried fruits, vanilla pulse until you get as sticky dough, while adding the fruit juice gradually.
- You should get a thick, sticky dough- but still malleable. If it’s too hard, add more liquid.
- If you want children to have them, take apportion aside. Add the alcohol to the rest and knead the dough gently until combined.
- Shape small balls (about 3 cm) then roll them in the desiccated coconut.
- Rest them in the refrigerator. They can be served in about an hour, but they taste even better the next day.
