Cod with edamame beans

Background
If you want a quick, healthy recipe, try this Japanese-style cod with edamame beans! It’s ready within 15 minutes, it’s gluten-free, dairy-free, low-cal, low-carb and full of fiber. Serve it with brown rice, quinoa or a green salad.
Ingredients
- 1 shallot
- 1 red or yellow bell pepper
- 1 Tbsp vegetable oil
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 tsp mirin or rice wine
- 200g edamame beans
- 2 cod fillets
- 2 tsp sesame oil
- Coriander leaves
- Salt and pepper
Instructions
- Finely chop the shallot. Thinly slice the bell pepper.
- Heat the oil in large, shallow pan and gently sauté the shallot and pepper pieces for 5 minutes. Add the beans, soy sauce, vinegar and Mirin. Add a drop of water, if needed.
- Put a lid on and cook for 3 minutes.
- Meanwhile cut the cod into bite-sized pieces.
- Put the cod pieces on top of the beans. Season them with salt and pepper and drizzle some sesame oil over them. Put a lid on and steam for 3-5 minutes, over low heat, until the fish has cooked through.
- Scatter the coriander leaves on top and serve immediately.
