Coriander Carrot Soup
Background
This is coriander carrot soup is another quick, simple and delicious one to make using a pressure cooker. It's really warming and quite filling despite being low in calories - only about 80 kCal per portion. The flavour is rather subtle and, if you're not dieting, it's great with chunky fresh wholemeal bread!
Ingredients
- 1 Tbsp vegetable oil
- 1 large leek
- 2 potatoes
- 1 tsp ground coriander
- 500g carrots
- 1½ litre vegetable stock
- 25g fresh coriander (including for garnish)
Instructions
- Roughly chop up all the vegetables.
- Heat up the oil over a medium heat in the pressure cooker. Put in the leek and stir gently until it softens.
- Add the potatoes and carrots, then stir in the ground coriander before adding the stock. Season to taste.
- Pop on the lid and bring up to pressure (as per manufacturer's instructions) and cook for 5 minutes (high pressure) or 7 (medium).
- Allow to cool by itself then remove the lid and add most of the fresh coriander, keeping back some for garnish. Use a hand blender to create a nice smooth creamy texture and serve it up!
Tips
- If you don't have a pressure cooker, you can use a heavy-based pan but you'll need to simmer it for about 25 minutes.
- It's particularly nice with a dollop of crème fraîche or soured cream.
