Background
If you need a quick an easy side dish that goes well with grilled/fried meat & fish the recipe of this courgette and radish salad could come handy. It’s ready under ten minutes and ideal for parties and picnics too. I normally serve it with grilled koftas, shish kebab or Greek meatballs (keftedes) tacked in a grilled pita bread.
Ingredients
- 1 large handful of radishes ( about 200g)
- 1 small courgette
- 3 Tbsp Greek yoghurt
- 3 spring onions
- ½ lemon, juiced
- Salt and pepper
- 1 clove of garlic, minced
- 1 Tbsp chopped dill
- Drizzle of olive oil
Instructions
- Thinly slice the radishes and put them in a sieve. Shave the courgette into thin, lon strip using a vegetable peeler. Put these in the sieve too. Drizzle with the lemon juice, season with salt and mix well. Let it stand over a bowl for at least 10 minutes, or up to 30 minutes if you have time. Drain, and put them in a serving bowl.
- Finely chop the spring onions, add to the bowl.
- Mix the yoghurt with the dill and garlic.
- Pour this over the salad, toss well and season with freshly ground pepper. Taste, and add more lemon juice of needed.
- Serve with olive oil drizzled over the salad.
