Crayfish and chorizo spaghetti

Background
Every time I go to Lidl I have to buy a pack of their shelled & cooked crayfish tails! Not only are they yummy (and reasonably priced!) they are perfect for nibbles and quick & easy meals such as salads and pasta dishes. This yummy Crayfish and chorizo spaghetti takes just 10 minutes to cook so it's ideal on busy or lazy days. You can use other types of pasta - I made it with gluten-free spaghetti.
Ingredients
- 100g chorizo
- 2 Tbsp extra virgin olive oil
- 100g cooked Crayfish tail
- 1 cup green peas, defrosted
- 200g spaghetti
- Dried chilli flakes to taste
- Salt & pepper
Instructions
- Cook the pasta according to the package instructions.
- Meanwhile, skin then chop the chorizo.
- Heat 1 Tbsp oil in frying pan. When it begins to brown and releases its fat, add the crayfish and the peas. Cook for 3-5 minutes, until the peas are tender and crayfish has warmed through.
- Drain the pasta, reserving about half a cupful of the cooking water.
- Toss the paste with the chorizo-crayfish mixture, add remaining olive oil and some cooking water (it should be moist). Stir in some chilli flakes then season with salt & pepper.
- Serve immediately.
Tips
- Instead of peas you can make this dish with spinach, green beans, kale or roasted pepper!
- To make it even more spicy, fry a cilli (chopped) with the chorizo or use spicy sausage!
