Crispy courgette wrapped fish

Background
I love making this crispy courgette wrapped fish for special occasions! Itβs really yummy yet very simple to prepare - in fact the pesto can be made hours ahead and the fish only takes 10 minutes to wrap and fry. So this dish is ideal for dinner parties. Serve it with a mash or grilled veggies or a crispy salad.
Ingredients
- 400g white fish fillet
- 1 large courgette
- 2 tbsp olive oil
- Salt & pepper
- Courgette pesto:
- 1 medium courgette, grated
- 1 handful of mint leaves
- 1 handful of parsley green
- 20g grated Parmesan (can be vegan version)
- 1 clove of garlic, minced
- 1 tsp grated lemon zest
Instructions
- First make the courgette pesto: put all the ingredients in a small food processor, then whizz until you get a coarse paste. Put it aside.
- Using a vegetable peeler cut the courgette into long, thin slices. Cut the fish in half, rub with salt & pepper, then carefully wrap with 2-3 courgette slices.
- Heat the oil in a frying pan. When hot, fry the wrapped fish for 2-3 minutes on each side until the courgette is crispy and the fish is cooked through.
- Brush the fried fish with the pesto, then serve with vegetables/salad and the remaining pesto on the side.
