Crushed potatoes with garlic
Background
The advantage of cooking new potatoes is that they don't need to be peeled. Unfortunately, mashed potatoes are not very nice with their skins on, but just slightly crushing them with a fork and adding some herbs, veggies or even bacon transforms boring plain boiled potatoes into a delicious side dish. This crushed potatoes with garlic is just a basic recipe - use other herbs if you like, such as basil, dill, parsley or tarragon - depending on your main dish. It's quite nice with thyme or rosemary too - Β but these two are best fried with the garlic. If you want to spice it up, just add a few pinches of crushed chili to the oil. Actually, you can hardly go wrong with this recipe!
Ingredients
- 700g new potatoes
- 50g butter or dairy-free spread or 2 Tbsp olive oil
- 2-3 plump cloves of garlic, minced
- 2 Tbsp chopped chives or other herbs
Instructions
- Rub and rinse the potatoes. Cook them in slightly salted water for 10-15 minutes until tender, then drain.
- Meanwhile: fry the garlic in the butter for about one minute at a low temperature. Be careful not to burn the garlic, otherwise it will make everything bitter!
- Crush the potatoes with a fork or masher, then add the garlic butter and toss. Stir in the chives and season with salt and pepper.
Tips
You can also add other pieces and sauces to the crushed potatoes - mustard, harissa paste, chilli paste, paprika, caramelized onion, pesto, tapenade, yoghurt and so on.Categories
