Cucumber and radish salad with goat cheese dressing

Background
This cucumber and radish salad is served with a goat's cheese dressing, which makes it very interesting and healthy. It goes really well with barbecued or grilled lamb, or perfect with a vegetarian burger.
Ingredients
- Half a cucumber
- 100g radishes
- 1 tsp olive oil
- 1 tsp lemon juice (freshly squeezed)
- 1 small handful of each: coriander, mint and parsley leaves
- 1 tsp cumin seeds
- Dressing:
- 2 Tbsp soft goat cheese
- 1 Tbsp Greek yogurt
- Β½ tsp olive oil
- 1 pinch of cumin
- 1 Tbsp water
- Β½ tsp olive oil
- Salt & pepper
Instructions
- Dry-fry the cumin without oil and crush it coarsely using a pestle & mortar.
- Mix the dressing and season to taste. Set aside until serving.
- Cut the cucumber in half lengthwise, then scrape out and discard the seeds. Thinly slice the flesh.
- Slice the radishes finely. Chop roughly the herbs.
- Toss the cucumber, radish, herbs, oil and lemon juice in a serving dish. Season to taste.
- Just before serving spoon the cheese sauce over the salad.
