
Background
For summer garden parties, barbecues and picnics it's good to know a few, simple salad recipes.Β This cucumber and radish salad is one of the best of them! It's quick and easy to make; it goes well with barbecued fish & meat and it also makes a good burger, wrap or sandwich filling.
Ingredients
- I bunch of radish
- 1 red onion
- Β½ cucumber
- 2 Tbsp extra virgin olive oil
- 1 Tbsp white wine vinegar
- Couple of pinches of unrefined sugar
- 1 clove of garlic, minced
- 1 Tbsp chopped fresh dill
Instructions
- Slice the radish, cucumber and onion, then put them in a large serving bowl.
- Whisk olive oil, vinegar, sugar, garlic, and dill in a small bowl, then season with salt and pepper. Pour this over vegetables and toss to combine.
- Cover and refrigerate until needed (at least 30 minutes before serving).
