Background
If you have some leftover roast or grilled chicken, why not use the meat to make healthy salads the following day? Β This delicious, filling & healthy curried chicken salad can be thrown together in just 5 minutes! Ideal for lunch, picnics, or your lunch box at work.
Ingredients
- 1 cup roughly chopped leftover grilled/roasted chicken meat
- 4 Tbsp Greek yoghurt or Skyr
- 1 Tbsp raisins
- 1 tsp mild curry powder
- I handful black grapes, halved
- 1 handful of walnuts, roughly chopped
- 2 handful of mixed salad leaves.
Instructions
- Mix the yogurt with the raisins, curry powder then poor over the chicken and coat well. Season to taste.
- Rinse and drain the salad leaves and scatter them onto two plates. Spoon the chicken mixture on top and scatter the grapes and walnut around.
- Serve immediately - or you can chill it until ready to serve.
