Background
This recipe is very popular in the state of Rajasthan - it is really sumptuous and yet low in calories. Choose tender okra for this recipe so that it will cook quickly. Above all, the rich and fascinating aroma is so tempting that you won`t feel that you are eating low calorie food!
Ingredients
- 2 cups chopped okra
- 1 cup low fat curd
- 2 tsp coriander powder
- 2 tsp chilli powder
- 1 pinch turmeric powder
- 1 tsp chickpea powder
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp fennel seeds
- 1/8 tsp asafetida
- 5 to 7 curry leaves
- 1 tsp oil
- Salt to taste
- Chopped coriander leaves for garnishing
Instructions
- Take a bowl and combine the curd, coriander powder, chilli powder, chickpea powder and salt with 2 Tbsp of water and keep aside.
- Heat oil in a deep bottomed pan then add cumin seeds, mustard seeds, fennel seeds, asafetida and curry leaves.
- When the seeds crackle, add chopped okra and cover with a lid. Simmer for 3 to 4 minutes.
- When the okra becomes soft add the curd mixture and cook for another 5 minutes.
- Remove from the flame and garnish with coriander leaves.
- Serve hot with rotis or steamed rice.
