Dahi Vada (Vada in yogurt)

Background
Dahi vada is one of my personal favourites. It is so very tasty and melts away in your mouth. This vada can be made for special occasions like festivals, get togethers, etc. This recipe is famous in the South of India. There isΒ a different version in the north of India.
Ingredients
- 6 Vadas
- Sufficient water for soaking
- 2 Cups Plain yogurt (Churned)
- 1 Ginger, chopped
- 1 Green chilli, chopped
- 2 Dry red chillies, broken into half
- 1 tsp Mustard seeds
- Sprig of curry leaves
- Salt as required
- 1 tsp Oil
Instructions
- Soak the vadas in water for an hour, then squeeze and remove them.
- In a bowl, add the churned yogurt and salt and mix.
- Add the squeezed out vadas to the yogurt.
- In a pan, heat oil and add mustard seeds and let them splutter.
- Add the ginger, green chillies, dry red chillies and curry leaves.
- Add this seasoning to the yogurt and vada.
- It is best served after a few hours of soaking in the yogurt. It can be made ahead of time.
