Dairy-free cherry panettone made in bread machine

Background
This dairy-free cherry panettone is made in a bread machine, so it’s super easy ( although it takes a long time!). The result is soft and yummy - most importantly, it can be enjoyed by those who have dairy allergy. It’s an ideal gift for friends and family members too - particularly if they’ve invited you to a Christmas party. Or just make it for yourself to accompany your morning coffee during advent.
Ingredients
- Initial Ingredients:
- 1½ tsp dried yeast
- 400g strong white flour
- 4½ tbsp sugar
- 1 tsp salt
- 50g dairy-free margarin, cubed
- 2 medium eggs, beaten
- 200 ml almond milk – warmed to room temperature
- Additional Ingredients for later in cycle:
- 70g margarine, cubed
- 50g candied citrus peel, chopped
- 50g dried cherry
- 50g currants
Instructions
- Add the Initial Ingredients to the bread machine pan in the order listed.
- Select the Brioche setting (if there isn’t one, then select the basic bread setting).
- When the machine beeps, add the Additional Ingredients. If the machine doesn’t have a brioche setting, then add them about 10 minutes before the end of the first kneading cycle (about 60 minutes from starting).
- When the panettone is ready, take it out of the machine, let it cool for 10 minutes in the tin, then turn out onto a wire rack.
