Dairy Free Fish Pie

Background
The recipe below lists the ingredients for a delicious Dairy Free Fish Pie but if dairy is not a problem for your family then do feel free to use normal milk and butter instead of sunflower oil - and of course grated cheese on top! Either way it's great comfort food - really easy to make and the kids love it.
Ingredients
- 1kg potatoes
- 400 ml almond/oat milk
- 25 ml sunflower oil x 2
- 25g cornflour
- 4 spring onions
- 400g filleted fish mix (e.g. cod, salmon, smoked haddock etc)
- 100g of fresh peeled prawns
- 3 hard boiled eggs, shelled & sliced
- 1 tsp Dijon mustard
- handful chives
- handful sweetcorn
- handful frozen peas
Instructions
- Pre-heat the oven to 180Β°C C.
- Peeled and halve the potatoes, then place into lightly salted water in a saucepan. Bring to the boil and simmer for about 15 mins until tender.
- When cooked, drain thoroughly, add 25 ml of oil and mash with a drop of almond milk. Add some frozen peas if you like, then season to taste with ground black pepper.
- Put 25 ml oil, the cornflour and the finely sliced spring onions into another pan and heat gently, stirring regularly, for a couple of minutes.
- Gradually blend in the milk then bring to the boil, stirring to avoid any lumps and catching on the pan. Cook for 3 β 4 minutes until thickened.
- Take off the heat and stir in the fish, prawns & boiled eggs followed by the other ingredients, then transfer to a medium-sized ovenproof dish.
- Spread the potato on top then pop in the oven for 20 - 25 mins until browned & bubbling at the edges.
Tips
Finish under the grill for a couple of minutes for a more brown & crispy texture.© 2024 Copyright CookTogether
