Background
Danish rum balls, called Romkugler, are truffle-like golf-ball-sized sweets that are made of crumbled biscuits, chocolate and rum which are then coated in sprinkles, coconut or cocoa. Β They can be made very easily and are perfect treats or gifts - particularly at Christmas time or for special occasions. This version has Β some added coffee in it too.
Ingredients
- 125g rolled oats (porridge) or oatmeal
- 75g light muscovado sugar
- 50g grated coconut
- 4 Tbsp cocoa powder
- 50g butter
- 4 Tbsp dark rum
- 4 Tbsp strong coffee or espresso
- ¼ tsp salt
- To serve: coconut or cocoa powder
Instructions
- If you're using rolled oats, put these in a blender and whizz until you get fine oatmeal.
- Add the remaining ingredients, blend for 1-2 minutes, until you get a dense, coarse mixture.
- Put the mixture into clingfilm and roll it up into a sausage shape. Rest in the fridge for 2-3 hours (or 30 minutes in the freezer if you're in a hurry).
- When the dough is hard, cut into 1 inch segments. Form balls from these between your (clean!) palms to roll and coat them with desiccated coconut or cocoa powder.
- Store in an airtight box or jar in the fridge until use.
