Background
Danish rum balls, called Romkugler, are truffle-like golf-ball-sized sweets that are made of crumbled biscuits, chocolate and rum which are then coated in sprinkles, coconut or cocoa. They can be made very easily and are perfect treats or gifts - particularly at Christmas time or for special occasions. This version has some added coffee in it too.
Ingredients
- 125g rolled oats (porridge) or oatmeal
- 75g light muscovado sugar
- 50g grated coconut
- 4 Tbsp cocoa powder
- 50g butter
- 4 Tbsp dark rum
- 4 Tbsp strong coffee or espresso
- ¼ tsp salt
- To serve: coconut or cocoa powder
Instructions
- If you're using rolled oats, put these in a blender and whizz until you get fine oatmeal.
- Add the remaining ingredients, blend for 1-2 minutes, until you get a dense, coarse mixture.
- Put the mixture into clingfilm and roll it up into a sausage shape. Rest in the fridge for 2-3 hours (or 30 minutes in the freezer if you're in a hurry).
- When the dough is hard, cut into 1 inch segments. Form balls from these between your (clean!) palms to roll and coat them with desiccated coconut or cocoa powder.
- Store in an airtight box or jar in the fridge until use.
