Date and orange cookies
Background
During the winter festivities it’s nice to have some home-made aromatic cookies with tea and coffee. If you’re bored with gingerbread cookies, why don’t you try something different? These rustic date and orange cookies are yummy, gooey and smell very festive! They also make lovely gifts to friends and family members, wrapped nicely in cellophane or paper.
Ingredients
- 150g chopped dates
- 2 Tbsp golden syrup or honey
- 2 Tbsp water
- ¼ tsp baking soda ( bicarbonate of soda)
- 1 tsp grated orange zest
- 250g flour
- 150g crystal sugar
- 100g butter or dairy-free margarine
- 1 egg
- icing sugar
Instructions
- Put the chopped dates, syrup and water in a pan, bring to the boil then remove from the stove. Let it cool for 5 minutes, then stir in the baking soda and orange zest.
- Transfer the mixture to a food processor and blend until smooth, then add the flour, sugar, butter, eggs and pulse for a few minutes. It’s done, when the dough is firmly sticks together.
- Wrap the dough with clingfilm and rest in the refrigerator for 30 minutes.
- Preheat oven to 180°C.
- Line a baking sheet with parchment paper and take the dough out of the refrigerator.
- Using a spoon, drop dollops of the dough onto the baking sheet, at least 3 cm apart, then lightly press the tops.
- Bake the cookies for about 15 minutes until light brown, then transfer them to a cooling rack.
- When cool, dust them with icing sugar.
- Store them in an airtight box or jar.
