Background
Waldorf salad is usually made with mayonnaise. This diet waldorf salad is a more healthy version - and you can make even more “skinny” if you use 0% Fat Greek yogurt. It takes only 5 minutes to prepare - it’s so delicious during late summer, early autumn! I like taking it to picnics or in my lunchbox to work. It can be served with cold or leftover meats for quick and easy lunches/suppers.
Ingredients
- 2 green apples
- juice of 1 lemon
- 1 stalk of celery
- 1 handful of walnut kernels
- 1 cup of mixed grapes
- 50ml Greek yogurt
- 2 tbsp fresh pineapple juice
- salt& pepper
- Chopped chives
Instructions
- Coarsely chop the walnuts and lightly roast them in a pan (no oil needed). Leave them to cool.
- Thinly slice the celery stalk.
- Core the apples then slice them into thin wedges. Drizzle them with lemon juice, on both sides.
- Cut the grapes in half, then mix with apple slices and celery stalks. Add the yogurt and pineapple juice, gently combine.
- Season with salt &pepper, add the walnuts and mix gently.
- Serve with chopped chives scattered on top.
