Double chocolate mulled wine

Background
If you like mulled wine and you like chocolate - you'll be in heaven drinking this lovely, rich winter-warmer. This double chocolate mulled wine is very easy to make, but use good quality ingredients (the wine should be decent too!). Perfect for parties.
Ingredients
- 2½ litre water
- 500 ml red wine
- 200g brown sugar
- 100g of cocoa powder
- 1 large cinnamon stick
- 3 star anises
- 4 cloves
- 200g of dark chocolate (70% cocoa solids)
- 1 mandarin, halved
- One small strand of rosemary
Instructions
- Put the water, sugar, cocoa and spices into a heavy-based pot. Heat it gently until simmering, then turn off the heat.
- Break up the chocolate bar, then add it to the pan, stir with a whisk until you get a smooth sauce.
- Add the rosemary and mandarin, let it infuse for 10 minutes.
- Pour in the wine and warm it up - but do not boil!
- Add more wine or water if you find it too thick.
- Serve warm.
