Background
Dried shrimp and ridge gourd curry is a south Indian dish and dried shrimp is the main ingredient of this dish. Dried shrimp curry can be made with different variety of vegetables like brinjal or eggplant or cucumber.
Ingredients
- 30 gm Dried shrimp
- 1 Ridge gourd (peeled and chopped)
- 2 medium size Onions
- 2 Green chillies (chopped)
- Salt to taste
- A pinch of Turmeric powder
- 1 tsp Red chilli powder
- 1 tsp Coriander powder
- 1 tsp Ginger garlic paste
- 3 tsp Oil
- ¼ cup Coriander leaves (chopped)
Instructions
- Clean all dried shrimp by removing the head and tail. Rinse under running water thoroughly.
- Take water in a vessel and bring it to boil. Add the dried shrimp and leave for 5 minutes.
- Strain the water and keep the shrimp aside.
- Take a pan and heat the oil. Add onions and green chillies. Fry until golden brown.
- Add ginger garlic paste and fry for a minute.
- Add salt,turmeric powder,red chilli powder,coriander powder.
- Add boiled dry prawns,mix well and cook for 5 minutes.
- Add chopped ridge gourd pieces.Mix well and cover it. Cook for 20 minutes on simmer.
- For garnishing , add chopped coriander leaves.
- Serve hot with rice and ghee.
