Easy Frankfurter soup
Background
In Hungary one of the most popular soups is Frankfurti leves, which is a thick soup made with cabbage, potatoes and (as you have probably guessed) Frankfurters. My kids love it, but when I don’t have a cabbage or potatoes in the larder or I have very little time to make dinner, I cook them this super easy Frankfurter soup and serve it with mini dried pasta shapes (such as hoops, letters, numbers or stars) which take only 5 minutes to cook. Despite the soup not looking very pretty, it's actually really delicious - it can be the ideal hangover remedy, too, on New Year’s Day when, according to Hungarian Tradition, eating pork brings you good luck in the coming year.
Ingredients
- 750 ml chicken stock
- 2 medium carrots
- ½ celeriac ( or 1 parsnip)
- 1 garlic clove
- 1 bay leaf
- 1 cup of frozen peas
- 100g green beans
- 4-6 Frankfurters
- 1 tsp apple cider vinegar
Instructions
- Clean and chop the carrots & celeriac into chunks.
- Put the chicken stock into a pan, add the carrots, garlic, celeriac and bay leaf. Bring the soup to the boil and cook for about 10 minutes, until the carrots are tender.
- Meanwhile cut the Frankfurters into 2cm pieces and cut off the ends of the beans. Add these together with the peas to the soup and cook for 5 minutes.
- Before serving remove the bay leaf and add the vinegar.
