Easy lemon cake

Background
This is a very simple yet very tasty lemon cake! Perfect for those occasions when you want to bake something delicious but you don't have much time & energy to faff about.
Ingredients
- 150g self-raising flour
- 1 tsp baking powder
- 150g soft butter or dairy free margarine
- 150g caster sugar
- 2 large eggs
- 2 Tbsp milk or almond milk
- Finely grated zest of 2 lemons
- Lemon syrup:
- Juice of 1 lemons
- 50g caster sugar
Instructions
- Preheat the oven to 180Β°C . Grease and line the base of a cake tin.
- Sift the flour and baking powder into a mixing bowl.
- Beat the sugar with the butter until creamy then add the eggs, one by one. Add the milk and the lemon zest, then fold in the flour gently until you get a smooth dough.
- Spoon the mixture into the cake tin.
- Bake in the oven for about an hour or until cooked through.
- Rest for five minutes then turn out onto a wire rack.
- Strain the lemon juice. Heat it with the sugar in a saucepan until the sugar has dissolved.
- Drizzle the syrup over the warm cake.
- Serve when it's completely cooled.
Tips
To make sure the cake is cooked through, insert a skewer in the middle. If it comes clean and dry the cake is done.© 2024 Copyright CookTogether
