Easy seafood pasta
Background
This super easy seafood pasta is exactly what it says on the tin - incredibly easy to make, as everything is cooked in one pot and itβs on the table within 15-20 minutes. Itβs one of my favourite recipes for those days when I have little time to cook and hardly anything fresh in my fridge (I tend to make it with frozen seafood). Sometimes I add frozen peas or spinach too to make it a bit more wholesome. Also, I make it with different sorts of pasta - this time I had some gluten-free spaghetti to use up.
Ingredients
- 1 Tbsp olive oil
- 1 onion
- 1 garlic clove
- 1 tsp paprika
- 1 can passata (400g)
- 1 litre vegetable or chicken stock
- 300g spaghetti or other pasta (can be gluten-free)
- 1 pack (about 250g) frozen seafood mix (can be frozen)
- Chopped parsley and lemon wedges to serve
Instructions
- Roughly chop the onion and garlic.
- Heat the oil in a large pan, add the onion and garlic and gently sautΓ© for 5 minutes, until soft.
- Add the paprika, passata and stock. Bring to the boil, add the pasta and turn down the heat. Simmer for 7 mins.
- Add the mixed seafood (defrosted), and cook for 3-5 minutes until the pasta is cooked to your liking. Season to taste.
- Serve with chopped parsley sprinkled on top and lemon wedge on the side.
Tips
- If you use spaghetti, it helps to brake them roughly into 6-8 cm pieces.
- If you want it spicy β mix the paprika with chilli powder to your liking.
- Add some veggies (fresh or frozen) to make the dish more healthy!
