Festive pickled red onion
Background
Pickled red onion goes so well with steak, burgers and kebabs. It’s also useful for nibbles, with party snacks and on a cheeseboard. This festive pickled red onion is made with winter spices so it’s perfect for the holidays. It's a quick and easy recipe that makes a large jar which should take you right through the festivities!
Ingredients
- 3 red onions
- 200 ml white wine vinegar
- 50g cane sugar
- 10 black peppercorns
- 5 cloves
- 2 bay leaves
- 1 star anise
- 2-4 pinches of crushed chillies (to taste)
Instructions
- Peel and finely slice the onions. Put them in large bowl. Boil some water in a kettle (or in a pan) and pour over the onion. Leave for a minute, then drain and let it cool slightly.
- Meanwhile, put all the other ingredients into a pan, bring to the boil. When the sugar has dissolved turn the heat off.
- Put the onion into a sterilized jar and pour over the vinegar mixture. Make sure the onion is fully covered by the liquid.
- Seal the jar, let it cool then keep chilled to last longer.
