Background
This festive salad looks fantastic on a buffet table at a party or goes well with grilled/barbecued fish and meat. It can be made with rice, pearl barley, millet, buckwheat, couscous, quinoa or freekeh. I normally make it with brown rice or pearl barley. It's delicious, healthy and easy to make.
Ingredients
- 200g pearl barley/millet/rice/buckwheat/giant couscous/etc
- seeds of 1 pomegranate
- 4 spring onions, chopped
- 1 handful flat-leaf parsley, roughly chopped
- 1 handful mint, roughly chopped
- 2 Tbsp chopped pistachios
- 2 Tbsp pomegranate molasses
- 1 Tbsp olive oil
Instructions
- Cook the grains according the instructions on the pack.
- Meanwhile chop the spring opinions and the herbs.
- Drain the grains, let them cool then mix everything together.
- Season to taste.
Tips
You can easily make pomegranate molasses by boiling 500 ml pomegranate juice until it reduces to a thick syrup. Transfer it to a jar and you can use it for salad dressings and marinades.© 2024 Copyright CookTogether
