Fig and blue cheese tarts

Background
These little tarts are fantastic snacks that go well with a cup of tea or a glass of wine. So they are the perfect appetizer, starter, party food or even tea-time treat. The recipe works with both types of blue-cheese - e.g. salty Stilton or sweet Gorgonzola or anything else.
Ingredients
- 1 sheet of puff pastry (ready rolled)
- about 8-10 figs
- 2 Tbsp milk
- 150g blue cheese
- 30g walnut
- Ground pepper
- ½ tsp thyme leaves
Instructions
- Preheat the oven to 190°C.
- Mix the blue cheese and the milk until creamy .
- Chop roughly the nuts and add to the blue cheese. Add the thyme leaves, stir well. If necessary, add a little more milk to have a spreadable consistency.
- Cut the figs in half then into thin slices .
- Roll out the pastry onto a lightly floured surface and, using a pastry cutter or mug, cut out 10-12 cm diameter circular shapes. You should get about 4 or 6 disks. Fold the edges slightly to form a rim then place them onto a lined baking sheet.
- Starting from the centre spread the cheese mixture onto the tartlets up to the rim. Season with pepper then arrange the fig slices on top, slightly overlapping.
- Bake for about 15-20 minutes until the crust is golden and the figs are soft.
- Serve warm or at room temperature.
