Fig and halloumi salad

Background
This fig and halloumi salad is sweet and salty so itβs not only interesting but really yummy too! Perfect as a starter at a dinner party, or as a tapa/appetizer with a glass of fizzy.
Ingredients
- 1 Tbsp oil
- 4 figs
- Β½ block halloumi
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
- 1 handful mixed salad leaves
- Balsamic glaze, to serve
- Few pieces of walnuts, optional
Instructions
- Cut each fig into 4 wedges, the cheese into small cubes.
- Heat the oil in a frying pan and add the halloumi. Stir for about 3 minutes until they become lightly browned. Add the figs and balsamic vinegar.
- Let it sizzle. After a minute gently stirring, add the honey and caramelize the figs and cheese.
- Scatter the salad leaves onto a platter, then arrange the figs and cheese on top. Drizzle with the cooking jus and some balsamic glaze.
- Add a few pieces of walnuts, if liked.
