Fig and orange muffins

Background
These fig and orange muffins are ideal treats for special occasions and celebrations. They are light and tasty, slightly sticky - and they look very seductive! In fact they are so pretty, you could give them as gifts to your friends & family.
Ingredients
- 150g soft butter or dairy-free margarine
- 150g unrefined sugar
- 3 eggs
- 150g self-raising flour
- 1 orange, zest and juice
- 150g figs
- 2 Tbsp honey
- Topping: 2 figs
Instructions
- Preheat the oven to 180°C. Line a muffin tin or prepare silicon moulds.
- Using an electric whisk beat the butter and sugar until light and creamy.
- Add the eggs one by one, together with a tsp of flour, while you keep beating. Add the remaining flour and the grated orange zest. Carefully combine with a spatula.
- Chop the figs into 1 cm pieces, then mix gently in the batter.
- Spoon the mixture into the muffin cases.
- Cut the extra figs into thin wedges and put these onto each muffin, slightly pressing into the batter.
- Bake for 20-25 minutes until golden brown.
- Meanwhile, heat the orange juice and honey and cook until you get a thick syrup.
- Take the muffins out of the oven, spoon over the syrup, then allow them to cool for about 15 minutes, then transfer them to a wire rack.
