Background
Fig and cheese are generally best mates but Iβd never tried to combine figs with feta until just recently. This fig and feta salad only takes 5 minutes to throw together, and itβs really delicious, particularly as a tapa or starter with a glass of vino! You can use any type of lettuce - such as little gem, Romaine, curly endive or rocket - depending on how you want to serve it. I had it for lunch with crusty bread but it's suitable as a snack anytime and perfect for parties!
Ingredients
- 6 fresh fig
- 1 handful of walnut halves
- 50g feta
- 2 large handful of salad leaves
- Β½ tsp Dijon mustard
- 1 tsp white wine vinegar
- 2 Tbsp walnut oil
- Salt and pepper
Instructions
- Roughly chop the walnuts then toast them in a non-stick frying pan s for 2 to 3 minutes. Set aside.
- Make the vinaigrette by whisking the two oils, vinegar and mustard together. Season to taste and set aside.
- Rinse and wipe the lettuce leaves, scatter them onto individual plates or a big platter.
- Rinse and wipe the figs, then cut them into wedges. Arrange them on top of the lettuce.
- Crumble the feta on top and scatter the walnuts all over.
- Just before serving, drizzle the vinaigrette over the salad.
