Filo mincemeat rolls

Background
These filo mincemeat rolls are an easy way to use up leftover mincemeat for New Yearβs Eve party or and interesting version of mince pies during advent. Serve Β them with mulled wine, alternatively serve them with custard as pudding. This recipe can easily be vegan - just make sure you are using plant-based margarine and the mincemeat is vegan too. Ingredients
- 1 Tbsp olive oil
- 1 onion
- 1 thumb size piece of fresh ginger
- 400g carrots
- 1 cup red lentils, about 25
- 1 tsp mixed spice
- 1 litre vegetable stock
- 1 cinnamon stick
- 1 star anise
Instructions
- Preheat the oven to 180C. Line a baking tray with parchment paper.Β
- Peel, core then dice the apple into very small pieces (or grate it with a coarse cheese-grater).
- Mix the mincemeat and apple.Β Add a spoonful of brandy if the mincemeat is not boozy.
- Lay one sheet of filo pastry on top of a cold work surface and brush it with the melted butter.Β
- Lay another sheet on top, then cut this into four equal sized rectangles.
- Spoon some mincemeat mixture along one side of each square, then fold in the ends and roll them up tightly. Place them on the baking tray.
- Repeat with the remaining 2 sheets of filo.Β
- Bake for 8-10 minutes or until golden.
- Let them cool a bit, then dust them the cinnamon mixed with icing sugar.
