Frankfurters with root vegetable mash

Background
If you want your kids to eat more veggies, this recipe will help you. I normally use two main vegetables such as sweet potatoes and carrot ( and hide some parsnip or swede in there Β which they donβt even notice). I make this dish regularly for the family as itsβ quick and easy -Β and Β most importantly everybody loves it!
Ingredients
- 1 kg of various root vegetables ( such as parsnip, carrot, swede, turnip, potato, sweet potato)
- 1 stock cube
- 1 teaspoon thyme leaves
- Β½ head cabbage
- 1 teaspoon olive oil
- 10 Frankfurters
- Β½ red onion, chopped
- Dairy-free spread or soft butter
- Ground pepper
Instructions
- Peel and chop the vegetables, then put them in a pan of lightly salted water. Bring to the boil and simmer for about 15 minutes, until they are tender.
- Shred or thinly slice the cabbage and add to the vegetables for the last 2 minutes of cooking.
- Drain, then put them back in the pan and lightly mash them with a fork or potato masher. Season with salt and pepper and mix in some dairy-free spread or butter. Keep warm.
- Chop the sausages into 2 cm pieces, then fry them in the oil with onion for 2-3 minutes. Add the thyme, stir for a few seconds, then add the mashed vegetables.
- Cook for a couple of minutes, stirring occasionally.
- Serve warm.
