Fried egg with courgette and chorizo

Background
At the weekendΒ itβs nice to have a hearty breakfast or brunch. This Β Spanish-style dish is basically fried eggs with courgette and chorizo, which will set up for the day. Serve it with fresh bread or a piece of toast.
Ingredients
- 5 cm piece chorizo
- 1 courgette
- Β½ red bell pepper
- 1 ripe tomato, chopped
- 1 clove of garlic
- 1 tsp dried marjoram or oregano
- 1 Tbsp chopped parsley or coriander
- Cheese, optional
- 2 eggs
Instructions
- Take the skin off the chorizo, then cut it into small pieces.
- Heat a frying pan, then add the chorizo and cook over very low heat until the chorizo releases its fat.
- Meanwhile, cut the courgette into half-moon shaped slices, about 5mm thick. Cut the bell pepper into long strips.
- Add these to the pan, when there is enough fat and gently sautΓ© for 5 minutes or so, until the vegetables have softened.
- Make two wells in the pan, and carefully break the eggs into them.
- Cook for 3-5 minutes, according to your liking.
- Season with salt & pepper and scatter some fresh herbs on top.
- You can add some grated cheese, such as Manchego, if liked.
