Fried Halloumi with caper & lime dressing

Background
Halloumi cheese is a wonderful ingredient because you can make such fantastically tasty and super easy meals with it. This fried halloumi with caper & lime dressing isΒ a perfect example. It's ready within ten minutes, yet it's delicious, tasty and healthy. Serve it in pita bread or with some wholesome rolls. If gluten is a problem with you, just use gram flour for the crust!
Ingredients
- 1 pack of Halloumi (approx. 250g)
- 2 Tbsp flour (or chickpea/Gram flour)
- 2 Tbsp olive oil
- For the dressing:
- juice and zest of 1 lime
- 1 Tbsp white wine vinegar
- 1 Tbsp drained capers
- 1 tsp grainy mustard
- 1 clove garlic, minced
- 1 Tbsp chopped coriander leaves
- 2 Tbsp olive oil
- salt pepper
Instructions
- Pat the cheese dry with kitchen paper. Slightly crush the capers with a fork.
- Mix all the dressing ingredients and season with salt & pepper to taste.
- Cut the cheese into 1 cm thick slices.
- Mix the flour with a pinch of salt, then coat the cheese slice on both sides.
- Heat the oil in a frying pan (skillet) and fry on both sides until golden - this should take a couple of minutes.
Tips
If you don't have lime, you can use lemon instead.Categories
