
Background
Iβm not a dessert lover so when I invite people for dinner I often forget about the pudding or run out of energy to create something amazing. Luckily I keep several bags of frozen berries in my freezer β which can be used to make quick & easy desserts, smoothies and treats. This Frozen Mixed berries cream is ready in just 5 minutes and can be served with crumbled cookies, chopped nuts or just on its own. I normally provide crumbled Amaretti biscuits or shortbread on the side - and my guests are very happy indeed! You can add a drop of Creme De FramboiseΒ or Amaretto to the mixture if you want it a bit more special.
Ingredients
- 2 cups of frozen mixed berries
- 1 cup double cream
- 1 sachet (10g) vanilla sugar (more if needed)
Instructions
- Beat the cream with the sugar until you get a fluffy, whipped cream.
- Put the berries in a food processor, whiz until you get a coarse mixture. Add the cream and process, until you get a smooth cream.
- Alternatively fold the berries into the cream, creating marble effect swirls.
- Spoon the cream into 2 medium or 4 small glasses, decorate with some berries, and refrigerate until serving.
Tips
- Vanilla sugar can be made easily by adding a vanilla pod to a jar of caster sugar.
- You can make it sugar-free by substituting the vanilla sugar with 1tsp vanilla paste.
- For a healthier version use Acacia honey or Stevia - and instead of double cream, use coconut yoghurt or almond cream.
