Background
This Fruit cake is a desert made using a simple baking technique. The kid friendly dessert recipe is loved by kids and grown-ups equally. It can be relished with your evening tea as a snack or made as a special desert for any occasion or party at home.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- Β½ tsp baking soda
- 1 cup granulated white sugar
- Β½ cup soft white butter
- 2 eggs
- Β½ cup low fat milk
- Β½ cup dried fruits
- 2 tsp vanilla essence
Instructions
- Preheat oven to 175 c. grease and flour a loaf tin.
- Sieve flour, baking soda and baking powder thrice and keep aside.
- In a bowl, cream the butter and sugar till smooth and creamy. Add one egg at a time and beat till well combined. Add vanilla essence and combine.
- Add the flour in three additions, alternating with milk, starting with flour. Do not over beat, just mix till well combined in low speed.
- Sprinkle some flour over the fruits to coat them.
- Pour batter into the greased and floured loaf tin. Add the coated dried fruits over the batter.
- Bake in preheated oven for 40-45 minutes or till a toothpick inserted into the cake comes out clean. Allow it to cool for 15 minutes.
- Remove cake from pan and slice.
