Garlic and herb croutons

Background
When your bread goes stale, donβt throw it away, make croutons from it (even from ready-slice bread). These garlic and herb croutons can be added to winter soups, stews, salads and traybakes. You can use up white, rustic, gluten-free, wholemeal breads and baguette & ciabatta too for this recipe.
Ingredients
- 4 pieces of stale sliced bread or 2 large 2cm thick rustic bread
- 1 tsp dried oregano or marjoram
- 1 tsp mixed herbs (Provencal, Italian etc)
- 2 garlic clove, minced
- Β½ tsp chilli flakes (optional)
- 3 or 4 Tbsp Olive oil
- Salt & pepper
Instructions
- Preheat the oven to 180Β°C or set the grill to medium.
- First check the bread for any mould and smell it too. If itβs ok and it doesnβt smell bad, then you can make croutons from it.
- Cut the bread into cubes or rustic chunks and toss with the herbs, garlic and about 2 Tbsp olive oil. Scatter them into a baking tray and season with salt & pepper. You can add some chilli flakes too.
- Bake or grill for about 5 minutes until golden and crispy.
- Let the croutons cool, then transfer them to a jar. Seal the jar and store it in a cool, dry place.
