Garlic roasted chicken

Background
This garlic roasted chicken recipe is a must for garlic lovers! It uses 3 bulbs of garlic creating an amazingly yummy gravy! Serve it with a mash and steamed veggies or a crunchy salad. A perfect dish for a midweek family supper, or even a laid-back dinner party!
Ingredients
- 2 Tbsp olive oil
- 8 mixed chicken thighs & drumsticks
- 6 spring onions
- 1 handful of thyme
- 3 bulbs of garlic
- 2 Tbsp white wine
Instructions
- Preheat the oven to 180Β°C.
- Heat the oil in an ovenproof dish over medium and brown the skin of the chicken pieces.
- Meanwhile, slice the spring onions.
- Transfer the chicken pieces to a plate, then fry the spring onion & half of thyme leaves for a minute.
- Remove the husk of the garlic bulbs but don't peel the cloves. Crush them slightly with a flat knife.
- Scatter half of the garlic cloves over the onion, lay the chicken thighs (skin up) on top, then scatter the remaining garlic cloves around the chicken pieces.
- Pour the wine over, season with salt and pepper, then sprinkle with the remaining thyme leaves.
- Cover and bake for about 45 minutes until golden brown.
- Serve warm with side dishes of your choice.
