Gluten-free brownies

Background
The recipe forย these fat-free, dairy-free and gluten-free brownies was too good to be true, but to my surprise the result was absolutely yummy! So I make these little treats regularly, sometimes leaving out the rice flour completely which allow the brownies to be more gooey. Not only are these brownies delicious but they take little time & effort to make.
Ingredients
- 100g dark good quality chocolate
- 100g unrefined cane sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon bicarbonate of soda
- ยผ teaspoon salt
- 100g ground almond
- 50-100g rice flour (optional)
Instructions
- Melt the chocolate in a bowl over simmering water (the water must not touch the bowl!). Let it cool while turn on the oven to 170ยฐC.
- Add the sugar and eggs, then stir in the vanilla extract, add the bicarbonate of soda & salt and stir again.
- Add the ground almond & rice flour and stir until well mixed.
- Put the mixture into a greased & lined baking tin and spread out evenly.
- Bake for 20 to 25 minute. Let it cool in the tin then slice into squares.

The more rice flour you add to the batter, the more tense & crumbly the brownies become!Categories
