Goan Prawn Pickle

Background
I love pickles. This recipe is a Goan prawn pickle which is tangy and spicy. It can be stored for a month in the refrigerator. Β It goes well with rice or roti.
Ingredients
- 250g Fresh prawns (De-veined and de-shelled)
- 30 Dry red chillies
- 1 Tbsp Cumin seeds
- 100g Garlic cloves
- 3 Tbsp Oil
- 100 ml White vinegar
- Salt as required
Instructions
- In a bowl, add red chillies, garlic, cumin seeds, white vinegar and salt. Give it a light stir and set it aside for 15 minutes.
- Blend the above mixture in a blender to a smooth paste.
- Heat a pan on medium flame and add oil and the blended smooth paste to it.
- Add the prawns to the above mixture and fry until the prawns are cooked.
- Let the pickle cool down completely for storage in an air tight jar in the refrigerator.
