Goats cheese, peas and bacon frittata

Background
If you're after a hearty breakfast or brunch, this recipe's for you! It's very easy to make, so ideal for lazy weekends. Serve it with crusty bread or toast.
Ingredients
- 6 eggs, beaten
- 6 slices of bacon
- 100g goat's cheese (with rind)
- 100g green peas
- 1 handful basil leaves
- Parmesan cheese
- Salt and pepper
- 50g butter
Instructions
- Turn on the grill.
- Dice the bacon and slice the goat cheese 5mm thick.
- Melt the butter in an oven-proof saucepan and fry the bacon until crisp. Add the peas and cook for 1-2 minutes more.
- Add the chopped basil leaves and pour over the eggs, tilt the pan to spread the egg evenly. When the egg is jelly-like, place the goat cheese slices on top. Season to taste and sprinkle some grated Parmesan cheese on top.
- Put the pan under the grill for 2-3 minutes until the cheese is golden and starts to melt.
- Slice the frittata into wedges and serve with crusty bread.
