Background
Originally I was going to make lamb skewers with this recipe but the meat was cut too small, so couldn’t thread them onto a skewer. I decided to fry the pieces instead and served them in a pitta bread with a crispy salad and spiced sauce. This super easy Greek lamb fry is perfect for parties or laid-back suppers.
Ingredients
- 400g diced lamb of shoulder
- 1 shallot or small red onion
- ½ red bell pepper
- ½ red bell pepper
- For the marinade:
- 2 cloves of garlic
- 1 tsp olive oil
- Juice of 1 lemon
- 1 tbsp chopped parsley
- 1 tbsp chopped mint
- 1 chilli, finely chopped (optional)
Instructions
- Mix the marinade and pour over the meat in a bowl. Mix well, then rest in the fridge for minimum 30 minutes, up to overnight.
- Slice or chop the onion and red pepper.
- Heat a spoonful of oil in a frying pan and sauté them for 5 minutes. Then add the lamb (including the marinade) and stir-fry for 5 minutes until cooked through.
- Alternatively, cut the peppers and onion into big chunks and add them to the marinated meat, then thread the lamb and veggies (alternating) onto metallic or pre-soaked wooden skewers. Then barbecue or grill them, turning regularly, until charred.
- Serve warm tucked in flatbread with a salad and condiments of your choice.
