Greek-style halloumi salad
Background
This Greek-style halloumi salad is super easy to make, perfect for summer parties, picnics and BBQs. Serve it in pitta bread or as a side dish with grilled lamb, or on a buffet table. Β You can add some sliced red onion and kalamata olives to this recipe - then you'll get a traditional Greek salad with halloumi.
Ingredients
- ½ cucumber
- 200g ripe baby tomatoes
- 250g halloumi
- 2 Tbsp olive oil
- Mint leaves
- Dressing:
- 2 Tbsp extra virgin olive oil
- Β½ tsp dried oregano
- 1 clove of garlic, minced
- Β½ lemon juiced
Instructions
- Wipe the cheese with paper towel and cut into 1 cm slices.
- Dry the halloumi with paper kitchen towel, then cut it into 2cm cubes. Heat the oil in a frying pan and fry the cheese on all sides until golden brown.
- Meanwhile, cut the tomatoes and cucumber into small cubes and put them in a serving bowl
- Mix the dressing in a small bowl.
- Transfer the halloumi cubes to a plate, lined with paper kitchen towel. When cool, add to the salad, season to taste and toss well.
- Serve the salad with mint leaves scattered on top.
