Green beans and leek with bacon

Background
This green beans and leek with bacon is ready within 15 minutes. You can serve it with rice, mashed potatoes, pasta, gnocchi or on a piece of toast.
Ingredients
- 6 rashes of smoked bacon
- 1 leek
- 100g green beans
- 1 Tbsp vegetable Oil
- 1 clove of garlic
- Β½ cup chicken stock
- 2 Tbsp chopped parsley
- Freshly ground peppercorn, to taste
- Water
- Lemon juice
Instructions
- Thinly slice the leek. You can cut the beans in half if preferred.
- Cut the bacon into small cubes.
- Heat the oil in a frying pan and cook the bacon until crispy, then transfer them onto a plate.
- Add the leek to the pan and gently sautΓ© for 5 minutes, then add the beans and garlic. Sautee for a minute then add the stock.
- Put a lid on and steam for 5 minutes, then remove the lid, add the bacon and reduce the liquid. Add the parsley and lemon.
- Season with ground peppercorn and serve.
