Green pea and goat’s cheese spread
Background
If you’re after a tasty sandwich or nibble spread try out this green pea and goat’s cheese spread. It’s yummy, vegetarian and healthy. It’s ready in just 5 minutes. Serve it on toast, crostini or blini. Alternatively serve it a dip (add more yogurt to the mixture) and serve it with bread-sticks and biscuits.
Ingredients
- 1 cup petit pois
- 1 clove of garlic, grated
- ½ lemon zested and juiced
- 1 tsp olive oil
- 75g soft goat's cheese
- 1 Tbsp Greek or goat yogurt
- 2 Tbsp chopped dill
- Salt and pepper
Instructions
- Steam the peas over boiling water for 3-5 minutes, then drain. Rinse with cold water, then drain again.
- Meanwhile in a bowl, mix the cheese with the yogurt and garlic, then add the dill, lemon zest and juice.
- Put the peas in a mixing bowl and using a potato masher or fork, mash the peas into a coarse paste.
- Add the goat’s cheese mixture and season with salt and pepper. Mix well.
- Refrigerate until serving.
