Green pea burger with oats and herbs

Background
This green pea burger with oats and herbs can be vegan, vegetarian or gluten-free according to your diet. It’s super easy to make, although it’s worth resting the mixture for a while as the oats bind it together better. Serve it with your favourite condiments and toppings. Flax-egg recipe here>>
Ingredients
- 1.5 cup green peas
- ½ cup oats ( gluten-free, if needed)
- 5 spring onions
- 2 cloves of garlic
- 1 egg or flax-egg
- ½ lemon, zested and juiced
- 2 Tbsp parsley leaves
- 2 Tbsp mint leaves
- 3 Tbsp breadcrumbs ( gluten-free, if needed)
- Salt & pepper
- Oil for cooking
- Breadcrumbs for coating
Instructions
- Blanch or steam the green peas, then rinse them under cold water. Let them cool.
- Meanwhile thinly slice the spring onion, mince the garlic and whisk the egg or make the flax-egg for a vegan version.
- Put the peas, oats, spring onion, herbs, garlic, egg ( or flax-egg), lemon zest and a squeeze of lemon juice in a food processor and whizz until you get a coarse mixture. Don’t purée it!
- Season with salt and pepper, then transfer the mixture into a bowl and rest it in the fridge for minimum 30 minutes ( ideally 2 hours).
- Take the mixture out of the fridge. It should be sticky and a bit soft but holding together - if not, add some breadcrumbs and combine.
- Make about 6-8 patties between your palms, then coat them in the breadcrumbs.
- Heat some oil in a frying pan or spray the patties with oil.
- Fry the patties on each side until golden. (Alternatively, you can bake them for a healthier version.)
- Assemble the burgers to your liking - or serve the patties with a dip or salad and perhaps baked sweet potatoes.
