Background
I make hummus regularly and I like to jazz it up according to the season or occasion. This green pea hummus is perfect for Summer parties, picnics and barbecues. Itβs very much liked by kids - so ideal for kids parties and lunch boxes (instead of cayenne use paprika for them).
Ingredients
- 1 cup of green peas (can be frozen)
- 2 cups of cooked chickpeas, drained
- 2 tbsp tahini
- 2 cloves of garlic, chopped
- 2 pinches of cayenne/paprika
- 1 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp chopped mint leaves
- Salt and pepper
- Paprika & mint leaves to garnish
Instructions
- Steam or boil the peas for 2 minutes, then rinse them in cold water. Drain.
- Put all other ingredients in a blender. Blend for a minute, then add the peas. Pulse until you get the desired texture and thickness (add some water to thin it down, if preferred).
- Taste it and adjust the seasoning - add more cayenne, mint or lemon juice to your liking.
- Transfer the hummus into a serving bowl, then garnish with paprika and mint leaves.
