Green salad with lentil and goat cheese

Background
This is a perfect, wholesome & healthy salad that is very easy to make. If Β you use tinned lentils, it can be put together in just five minutes. I like the crunchiness of freshly cooked lentils, so for me it's worth the extra 20 minutes cooking time.
Ingredients
- 200g brown lentils
- 1 bay leaf
- 2 spring onions
- 1 Tbsp parsley
- 100g cherry tomatoes
- 50g mixed green salad
- 50g soft goat cheese
- For the dressing:
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- Β½ tsp honey
- 1 clove of garlic, minced
Instructions
- Rinse the lentils, then cook with the bay leaf until tender, for about 20 minutes.
- Drain, rinse with cold water, then tip into a serving bowl. Remove bay leaf,
- Cut the tomatoes in half and chop the spring onions.
- Add lettuce, tomato and onion pieces. Mix well. Crumble the goat cheese over the salad.
- Mix the dressing and pour over the salad.
- Serve with wholesome bread or pita, flatbread etc. Or serve it as a starter.
