Background
Shawarma is the Arabic term referring to the preparation of meat in various ways, followed by a slow roasting method on a vertical spit (just like the Turkish dΓΆner or Greek gyros). In this recipe the salmon is marinated in Β the usual, spiced sauce, then grilled on a BBQ, griddle pan or in the oven. It's absolutely delicious, perfect for dinner parties or laid-back get-togethers. Serve it with flat bread, grilled veggies, saladΒ or pilaf.
Ingredients
- 4 salmon fillets
- 3 green cardamom
- ¼ tsp ground coriander
- ¼ tsp ground cinnamon
- 2 pinches of ground ginger
- 1 small clove of garlic
- Juice of half a lemon
- 1 handful of coriander leaves, chopped
Instructions
- Push the cardamom seeds out of their shell, then crush them using a pestle & mortar. Add all the other ingredients (except the salmon) and make a coarse paste.
- Rub the salmon fillets with the paste and marinate in the fridge for about 2 hours.
- Remove the salmon from the refrigerator and allow to come to room temperature. Then grill or BBQ them on both sides for 4-5 minutes.
- Serve warm with your chosen side dishes.
