Grilled asparagus in foil
Background
If you put asparagus directly onto the BBQ or griddle, it burns very quickly. However, if you wrap it in foil then steam it over the charcoal, you get a delicious, tender, smoky-tasting asparagus.Β You can put all sorts of herbs and sauces in the packet - this simple version is made just with butter, lemon and chilli.
Ingredients
- 250g green asparagus
- 20g butter or dairy-free margarine
- Β½ chilli, deseeded and chopped
- Grated zest and juice of half a lemon
- Aluminium foil and baking parchment
Instructions
- Light the BBQ.
- Wash the asparagus and snap off the hard stalks.
- Cut out two sheets of baking parchment and foil (30x30 cm). Put the baking paper on top of the foil.
- Divide the asparagus between them sheets, add the butter, chilli, lemon peel. Squeeze the lemon juice over the asparagus, then carefully wrap them in the baking paper, folding the edges underneath. Now wrap these packets in the foil sheet, creating a well sealed pouch with no baking paper exposed. Make sure the juice can't escape!
- Bake for about 15 minutes over the coals - the asparagus should be al dente!
